Taste & Roast

There is no roast here. Matcha is green tea made from the whole ground leaf, so it keeps a bright, green flavor. Expect a naturally sweet taste with deep umami, the savory note good green tea is known for. Whisked with water, it turns frothy and vivid green, with a silky feel from the fine powder. With milk, it becomes a creamy latte where the sweetness and umami still come through.

The Leaves

Our matcha comes from Camellia sinensis, the tea plant, grown in the Kyoto region of Japan. The plants are shade-grown, which is what gives matcha its deep green color and rich umami. The leaves are then stone-ground into a fine, silky powder. The grade is ceremonial: the grade meant for whisking with water and drinking straight, the traditional way.

How to Prepare

For the traditional cup:

  • Sift 1 scoop (1 teaspoon) of matcha into a bowl.
  • Add 2–3 oz (60–90 ml) of hot water at 160–175°F (70–80°C).
  • Whisk briskly in a zigzag motion until frothy, then drink it right away.

For a modern twist, blend the matcha with your favorite milk for a smooth matcha latte. Sifting first breaks up small clumps, so the powder whisks in evenly.

When Did Matcha Become a Cup of Sweet Milk?

You wanted a vivid green bowl, sweet and savory with umami. What you get is a pale latte, a long line and the taste of syrup.

  • A café latte where you can barely taste the tea
  • Dull, olive-brown powder that clumps at the bottom of the cup
  • Pumps of syrup to cover a bitter, flat finish
  • Your morning ritual squeezed into a drive-thru window

Take the ritual back with Kyoto's ceremonial-grade matcha, whisked in your own bowl until it turns frothy and bright green.
